Have the deliciousness of pumpkin pie for breakfast without the guilt of sitting in front of a pie pan with a spoon at 9am! I've never done that..nope. Not me! The only hard thing about making this oatmeal is deciding what toppings to put on it!
1/2 cup rolled oats
1/4 tsp vanilla extract
1/2 tsp cinnamon
1/8 tsp allspice
1/8 tsp salt
1/2 tsp sugar, white or brown, or preferred sweetener
1/4 cup canned pumpkin or canned pumpkin pie filling
1/4 cup (or 4 tbsp) milk of choice
Preheat oven to 400 degrees. Lightly butter a ramekin or small souffle dish. In a small bowl mix all ingredients together thoroughly. Easy, right? Pour into buttered dish and smooth top with spoon. Bake for 20 minutes, then put under broiler on high for 3 to 5 minutes or until the top is crispy! Top with a splash of milk or cream, chocolate chips, whipped cream, or chopped nuts! These freeze well and are great even when they're cold.
