No Chicken! Chicken Noodle Soup

It's been surprisingly cold here in Florida for the last couple weeks! I figured it was the perfect time to break out a warm soup recipe. I wanted to make the traditional version of Chicken Noodle Soup but unfortunately with all of this cool weather all i have done lately is sip coffee indoors and i found myself completely out of chicken! So! Here's a veggie version of CNS that i really hope you'll enjoy.

Veggie Pot Pie

Lately at our house the dinners have been meatless. With the holidays and social obligations requiring so much of our time the occasional quick trip to the grocery store is as far as we go. Usually we'd also venture out to our local butcher shop and pick up the meat cuts we need but there's just no time for that right now! Since our schedules have changed I've been busy compiling as many tasty meatless recipes as I can and this one is one of our favorites. You'll notice I've used canned Cream of Potato and Cream of Celery. I would normally never use things like this, i'm big on DIY. If it can be made from scratch that's usually what i do however, this is such a time saver! Try to get the low sodium varieties if you can find them, but my grocery store did not have them in stock when i shopped for this meal.

Chocolate Mint Fudge

Great for a holiday or a party. Or a holiday party! Fudge is delicious but as good as it is, sometimes i just don't have the time to make it. My days are usually jam packed with laundry, dinners and toddler chasing so when i came up with a recipe that only requires 10 minutes of my time i knew it was a keeper!

Good Morning! Potato & Egg Breakfast Skillet



Did someone say breakfast?! Breakfast is my fiancés favorite meal of the day so I try my best to fill his mornings with yummy food and plenty of coffee. While he absolutely adores cereal and milk, sometimes I surprise him by actually cooking. I am definitely not a morning person but making food for loved ones always makes me happy!

Balsamic Red Onion Chicken with Black Beans





Two of my favorite things! Chicken and Black Beans! I eat this at least twice a week. It's great right outta the pan but put this mixture in a tortilla with some lettuce and sour cream and Oh My Goodness! I've actually eaten a whole pan of this by myself. (Shhh! Don't tell my family!) I usually make this in a large non-stick skillet but recently I got a cast-iron skillet and I liked it so much that I don't think ill ever make it in anything else.

Gooey Brownie Sundae



This recipe has two parts, a fudgy brownie and a delicious frosting that goes along with it! This is a cast-iron skillet recipe but you could certainly make this in a 10 inch baking dish. The frosting recipe is also multi-purpose. Along with brownies it can also be used on cakes, cupcakes, ice cream, cinnamon rolls and fruit. I used it like a dipping sauce once at a dinner party and paired it with fresh fruit and sweet breads. It was a big hit!

Ziti Al Forno


This is another one of the recipes that I use for big gatherings. This is honestly the best Ziti I have ever had. Zesty tomato sauce, bell peppers and cheese all wrapped around perfectly cooked pasta!! I like to serve it with an olive platter, garlic bread and red wine. Delizioso!
